Mopping during smoking helps lock in moisture while layering on flavor. Every 30 minutes, brush or mop this sauce onto your meat for a slow build of bold, smoky deliciousness and a glossy, caramelized finish.

Lonestar Barbecue Mopping Sauce Recipe

Ingredients:

  • 2 tablespoons butter

  • 1 medium onion, finely chopped

  • 2 cups beer (lager or ale preferred)

  • 1 cup BBQ sauce (store-bought or homemade)

  • 1 tablespoon apple cider vinegar (optional, for added tang)

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and pepper, to taste

Instructions:

  1. Melt butter in a medium saucepan over medium heat. Add chopped onion and sauté for 5-7 minutes, until soft and translucent.

  2. Add beer and simmer for 10 minutes to cook off the alcohol.

  3. Stir in BBQ sauce, garlic powder, smoked paprika, and vinegar (if using). Simmer for another 5 minutes.

  4. Season with salt and pepper to taste. Keep warm on low heat.

How to Use:
While smoking your meat, mop or baste every 30 minutes with the warm sauce. Make sure to hit both sides for full flavor coverage. Continue this process for 4–5 hours, or until your meat is fall-off-the-bone tender and glistening with a rich glaze.
