Bourbon Chicken & Fried Rice

This recipe makes a complete dinner — tender chicken, colorful veggies, fluffy rice, and a perfectly scrambled egg — all cooked on one skillet or griddle.
Ingredients
For the Chicken:

3 boneless, skinless chicken breasts, cubed

1/2 cup Papa Jack’s Maple Bourbon Marinade

1 tsp salt

1 tsp black pepper

1 tsp garlic powder
-
1 tsp sugar
For the Sauce:
-
1 cup soy sauce
-
1 cup apple juice
-
1 cup brown sugar
-
1/4 cup ketchup
-
1 tsp red pepper flakes
-
1 tsp ground ginger
For the Rice & Veggies:
-
1 red bell pepper, thinly sliced
-
1 cup peas (fresh or frozen)

2 cups cooked rice
-
1 tbsp soy sauce
-
1 egg
Instructions

Marinate the Chicken
In a bowl, toss the cubed chicken with Papa Jack’s Maple Bourbon Marinade, salt, pepper, garlic powder, and sugar. Let it sit while you prep the sauce and vegetables. -
Make the Sauce
In a small bowl, whisk together soy sauce, apple juice, brown sugar, ketchup, red pepper flakes, and ginger. Set aside. -
Cook the Chicken
Heat a large skillet or Blackstone griddle over medium-high heat. Sear the chicken on all sides until browned. -
Add the Sauce
Pour the sauce over the chicken and let it simmer until slightly thickened and the chicken is fully cooked. Push chicken to one side of the pan. -
Cook the Veggies & Rice
Add the red bell pepper to the open space in the pan. Sauté until softened and fragrant. Stir in the peas, then add the cooked rice. Drizzle with 1 tbsp soy sauce and toss to combine. Push to the side. -
Scramble the Egg
Crack the egg onto the empty space in the pan. Scramble until cooked, then fold into the rice. -
Combine & Serve
Toss the chicken, sauce, and rice mixture together until everything is evenly coated and glossy. Serve hot and enjoy your better-than-takeout bourbon chicken fried rice!
