There’s nothing quite like the magic of butter meeting high heat. These Butter-Seared Steak Bites are a quick, crowd-pleasing way to enjoy ribeye with a golden crust and juicy center. Whether you’re cooking on a Blackstone griddle, cast-iron skillet, or your favorite flat top, this recipe delivers the “perfect sear” every time.


Ingredients

  • 1 ½ lbs ribeye steak, cut into 1-inch cubes

  • ¼ cup Papa Jacks Steak & Chop Marinade (or your favorite flavor)

  • 2 tbsp unsalted butter, melted (plus 1 tbsp for finishing, optional)

  • 1 tbsp high-heat oil (avocado or canola)

  • Kosher salt & freshly cracked black pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Marinate the steak

    • Place cubed ribeye in a bowl or zip-top bag. Add Papa Jacks Steak & Chop Marinade and toss to coat. Let sit for 10–15 minutes (no need for overnight — our marinades penetrate quickly).

  2. Heat your surface

    • Preheat your Blackstone griddle (or cast-iron skillet) on high until it’s piping hot. A hot surface is key to getting that beautiful crust.

  3. Butter boost

    • Just before placing the steak bites on the hot surface, drizzle the melted butter over the marinated cubes. This step helps caramelize the edges and deepens the flavor.

  4. Sear the steak bites

    • Add a little oil to the griddle or pan, then carefully place the butter-coated steak bites down in a single layer. Don’t overcrowd — give them space to sear.

  5. Let them ride

    • Cook undisturbed for about 2 minutes. Flip each bite once and sear for another 2–3 minutes, or until they reach your preferred doneness.

  6. Finish & serve

    • For extra richness, toss in another tablespoon of butter right before removing from the heat. Garnish with fresh parsley if desired.
