Chile Lime Salmon Tacos

These Chile Lime Salmon Tacos are a burst of flavor with marinated salmon, spicy chili seasoning, and a fresh black bean salsa. Perfect for a quick and delicious meal!

Ingredients:

For the Salmon:

  • 1 lb fresh salmon, cut into 1-inch cubes
  • 1/4 cup Papa Jack's Fin & Feather Marinade
  • 1 tablespoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (if air frying) or cooking spray (if broiling)

For the Black Bean Salsa:

  • 1 cup cooked black beans (canned or freshly cooked)
  • 1 medium tomato, diced
  • 1/4 red onion, finely diced
  • 1/2 cucumber, diced
  • 1-2 jalapeños, finely diced (adjust to heat preference)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

For Tacos:

  • Soft flour tortillas (about 8)
  • Lime wedges for serving
  • Honey (optional, for drizzle)

Instructions:

  1. Marinate the Salmon:

    • In a bowl, combine the salmon cubes with Papa Jack's Fin & Feather Marinade. Toss to coat the salmon evenly. Let it marinate in the refrigerator for at least 15 minutes or up to 30 minutes for better flavor absorption.
  2. Prepare the Chili Rub:

    • In a small bowl, mix together chili powder, smoked paprika, cumin, garlic powder, cayenne pepper, salt, and pepper.
  3. Cook the Salmon:

    • Air Fryer: Preheat your air fryer to 375°F (190°C). Lightly toss the marinated salmon cubes in the chili rub mixture to coat. Spray the air fryer basket with olive oil, then add the salmon cubes in a single layer. Air fry for 7-9 minutes, shaking halfway through until the salmon is cooked through and slightly crispy on the edges.

    • Broiling: Preheat the broiler. Line a baking sheet with aluminum foil and spray with cooking spray. Toss the salmon cubes in the chili rub mixture and place them on the baking sheet in a single layer. Broil for 6-8 minutes, or until the salmon is cooked through and slightly charred on the edges.

  4. Make the Black Bean Salsa:

    • In a bowl, combine black beans, diced tomato, red onion, cucumber, jalapeños, and fresh cilantro. Squeeze the juice of 1 lime over the mixture and season with salt and pepper to taste. Toss everything together until evenly mixed.
  5. Assemble the Tacos:

    • Warm the soft flour tortillas in a skillet or microwave for a few seconds until soft and pliable.
    • Place a few pieces of cooked salmon on each tortilla.
    • Spoon a generous amount of black bean salsa over the salmon.
  6. Finish with Lime and Honey:

    • Drizzle fresh lime juice and lime zest over the tacos. If desired, drizzle a small amount of honey for a touch of sweetness (optional).
