Peri-Peri Grilled Chicken & Cheese Sandwich
Take your grilled cheese to the next level. This recipe layers gooey melted cheese with tender, juicy chicken that’s been marinated in Papa Jacks Fin & Feather Marinade. Cook the chicken in a skillet or air fryer, then build it just like a classic grilled cheese — buttery, golden bread on the outside, melty cheese on the inside, and bold citrus-butter-thyme flavor in every bite. Ingredients
- 2 boneless, skinless chicken breasts
- ½ cup Papa Jacks Fin & Feather Marinade (citrus, butter, thyme blend)
- 2 tsp Peri Peri seasoning (can substitute Cajun seasoning)
- 4 slices sandwich bread (sourdough or Texas toast works great)
- 4 slices cheese (cheddar, provolone, or mozzarella)
- 2 Tbsp butter (softened)
- Olive oil or cooking spray
Instructions
- Apply Fin & Feather Marinade to both sides of the chicken and season with the dry seasonings
- Pan-sear or Air fry in a skillet with a little olive oil until golden and cooked through (165°F).
- Let rest 3 minutes, then slice into strips or cutlets.
- Assemble the Sandwich
- Butter one side of each slice of bread.
- Layer cheese + sliced chicken + more cheese between two slices, buttered sides facing out.
- Grill It
- Heat a skillet or griddle over medium heat.
- Cook sandwich for 2–3 minutes per side, pressing lightly, until bread is golden and cheese is melted.
- Serve & Enjoy
- Slice diagonally, serve hot, and watch the cheese pull!
