Lemon Thyme Butter-Basted Chicken

This Lemon Thyme Butter-Basted Chicken will have your taste buds dancing with delight!  It is perfect for a quick weeknight dinner, as well as for special occasions as an impressive main course.

Papa Jacks Fin & Feather Marinade provides the incredible depth of flavor to this dish. It makes the chicken soak up the marinade like a sponge and carries the lemon thyme butter sauce throughout. 

The harmonious blend of the zesty, tangy, and savory flavors of this dish will leave you craving for more! 

Ingredients:

  • 1 whole chicken
  • 4 Tbsp. Papa Jacks Fin & Feather Marinade
  • 1/4 cup unsalted butter
  • 2 Tbsp lemon juice
  • 1 Tbsp lemon zest
  • 1 Tbsp dried thyme leaves
  • 1 tsp yellow mustard
  • 1 tsp honey
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. Season the chicken with salt and pepper to taste.
  3. Apply the Papa Jacks Fin & Feather Marinade to the surface chicken and distribute evenly with hands or a pastry brush.
  4. In a small saucepan, melt the butter over medium heat. Use a spatula or spoon to stir in the lemon juice, lemon zest, thyme, yellow mustard, honey, garlic powder, and onion powder. Cook the mixture for 1-2 minutes, or until fragrant.
  5. Transfer the chicken to the oven and bake at 375°F.  
  6. After 1 hour of cooking, baste the chicken on both sides with the lemon thyme butter sauce. 
  7. Continue cooking the chicken until the internal temperature reaches 165°F.
  8. Transfer the chicken to a baking dish and baste with the remaining lemon thyme butter sauce.
