Ingredients:
- 1 whole chicken
- 4 Tbsp. Papa Jacks Fin & Feather Marinade
- 1/4 cup unsalted butter
- 2 Tbsp lemon juice
- 1 Tbsp lemon zest
- 1 Tbsp dried thyme leaves
- 1 tsp yellow mustard
- 1 tsp honey
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 375°F.
- Season the chicken with salt and pepper to taste.
- Apply the Papa Jacks Fin & Feather Marinade to the surface chicken and distribute evenly with hands or a pastry brush.
- In a small saucepan, melt the butter over medium heat. Use a spatula or spoon to stir in the lemon juice, lemon zest, thyme, yellow mustard, honey, garlic powder, and onion powder. Cook the mixture for 1-2 minutes, or until fragrant.
- Transfer the chicken to the oven and bake at 375°F.
- After 1 hour of cooking, baste the chicken on both sides with the lemon thyme butter sauce.
- Continue cooking the chicken until the internal temperature reaches 165°F.
- Transfer the chicken to a baking dish and baste with the remaining lemon thyme butter sauce.
