Ingredients:
2 lbs. boneless, skinless chicken thighs
1/2 cup Papa Jacks Margarita Lime Time marinade (plus extra for basting)
Salt and freshly ground black pepper
Zest of 1 fresh lime
Juice of 1 fresh lime
Instructions:
Place chicken thighs in a bowl or zip-top bag. Add 1/2 cup Margarita Lime Time, season lightly with salt and pepper, and toss to coat. Let sit for 30 minutes (or up to 2 hours) in the fridge.
Preheat the Grill:
Heat your grill to 500°F for direct grilling.
Grill the Chicken:
Place chicken thighs directly on the grill grates. Cook for 5–7 minutes per side, basting with additional Margarita Lime Time marinade as you flip, until the internal temperature reaches 165°F.
Finish with Fresh Lime:
Remove chicken from the grill and immediately sprinkle with fresh lime zest and a squeeze of lime juice for a bright, citrusy finish.
Serve:
Let rest for 5 minutes. Serve hot with your favorite sides—grilled corn, rice, or a fresh salad pair great.
