Prime Rib Philly Cheesesteak with Garlic Mayo

Ingredients
- 2 hoagie rolls
- 1-2 cups leftover prime rib, thinly sliced
- 1 large onion, thinly sliced
- 1 green bell pepper, thinly sliced (optional)
- 1 tbsp butter or oil
- 4 slices provolone cheese
- Salt and pepper to taste
For the Garlic Mayo:
- 1/3 cup mayonnaise
- 1 clove garlic, finely chopped or minced

Prepare Garlic Mayo:
In a small bowl, mix mayonnaise with finely chopped garlic. Set aside. -
Sauté Vegetables:
Heat butter in a skillet over medium heat. Add onions and peppers, cooking until soft and golden. Season with salt and pepper. -
Warm the Prime Rib:
Push the veggies to one side of the skillet. Add the sliced prime rib to the other side and warm it through, letting it soak up the flavors. -
Melt the Cheese:
Mix the beef and veggies together in the skillet. Place provolone slices on top, cover with a lid, and let the cheese melt. -
Toast the Hoagies:
Toast the hoagie rolls until golden. Spread the garlic mayo generously inside each roll. -
Assemble:
Fill the rolls with the cheesy beef and veggie mixture. Slice and serve immediately.
